Hats off to the local organiser Tania who packed so much into eight days. We were completely exhausted by the end but happy. Local guides and drivers were excellent though getting found at the airports proved unexpectedly tricky. I think we should have been told that most guides are not allowed inside airports but they might have been a bit more proactive... Accommodation was always acceptable and in Lalibella quite exceptional. Highlights: the food tour of Addis Ababa, the way our guides would completely change the schedule to accommodate our wishes. Ethiopia is a full-on experience but in a good way with millenia of history and culture to absorb plus lovely food and welcoming people.
Kind and well informed local guides. Drivers super safe in quite challenging road conditions. But only one vehicle (in Addis) had all its seat belts working - why? We loved the flexibility that the guides showed when we wanted to adjust our itenerary. Our big learning was, after a few days, to ask for something rather than accept the planned tour. Ethiopia is a very poor country and so we accepted some of the limitations of the accommodation in one or two instances but in one place there were live electric cables coming out of the wall which should have been sorted and in another few of the room's appliances worked.
Get hotels to offer more fresh fruit at breakfast - the country is awash with bananas for instance but they were seldom available.

Ask for variations if you want them Take a good guide book for background If the tour says the walk is challenging it really means it! Be careful.
We all had different thoughts on this. Food tour pleased everyone with an excellent Guide. The churches in Lalibella were stunning and not yet overwhelmed with us tourists. Seeing Hippos a few metres away was incredible as a bonus.
